Recipe: Roasted Cauliflower
Cauliflower may be low in calories and fat, but it’s high in vitamin C and a good source of folate … and when seasoned and roasted, it makes for a simple, tasty side dish.
1 cauliflower head, leaves removed, cut in half
olive oil spray
2 tsp. freshly squeezed lemon juice
2 tsp. fresh lemon zest
1 tsp. dried herbs de Provence
½ tsp. freshly ground black pepper
¼ tsp. sea salt
1 tbsp. freshly grated Parmesan cheese
- Preheat oven to 350 degrees. Spray two halves of cauliflower with olive oil spray. Sprinkle lemon juice on each half. Place halves onto cookie sheet.
- Sprinkle lemon zest, herbs, pepper, and sea salt on cauliflower halves. Roast for 30 minutes.
- Remove from oven and top with Parmesan cheese.
Serves four; serving size is ¼ cauliflower. Each serving provides: 59 calories, 0.6 g total fat, 0.2 g saturated fat, 0 g trans fat, 1 mg cholesterol, 228 mg sodium, 12 g carbohydrates, 5 g fiber, 5 g sugar, 5 g protein.
