Recipe: Roasted Broccoli Rabe
½ lb. broccoli rabe (about 20 stalks)
1 tbsp. balsamic vinegar
½ tsp. onion powder
½ tsp. garlic powder
¼ tsp. sea salt
Olive oil spray
- Preheat oven to 425 degrees. Line a cookie sheet with a silicone liner or aluminum foil. Set aside.
- In a large bowl, toss all ingredients except for olive oil spray together. Spritz lined cookie sheet with olive oil. Spread broccoli rabe onto cookie sheet without crowding.
- Roast for 15 minutes or until edges are slightly browned.
Serves four; serving size is five stalks. Each serving provides: 20 calories, 0.6 g total fat (0.1 g saturated fat, 0 g trans fat), 0 mg cholesterol, 178 mg sodium, 4 g total carbohydrate, 3 g dietary fiber, 1 g sugars, 3 g protein.
