Recipe: Healthy Tuna Salad
½ cup (about ½ can) tuna fish, no salt added, water packed
2 tbsp. balsamic vinegar
2 tbsp. red wine vinegar
1 tbsp. diced shallots
2 tsp. fresh dill
½ tsp. Dijon mustard
1/8 tsp. sea salt
1/8 tsp. freshly ground black pepper
1 cup lettuce leaves
1 small Roma tomato, sliced
½ small cucumber, sliced
2 baby carrots, sliced
1 tbsp. very thinly sliced bell pepper (green or red)
- In a medium-sized bowl, whisk together tuna, vinegars, shallots, dill, mustard, salt, and pepper.
- Divide lettuce, tomato, cucumber, carrots, and peppers between two bowls.
- Divide tuna mixture on top of salad.
Makes two servings. A serving is ½ salad. Each serving provides: 90 calories, 0.5 g fat (0 g saturated fat, 0 g trans fat), 15 mg cholesterol, 210 mg sodium, 7 g carbohydrates, 5 g sugar, 1 g fiber, and 12 g protein.
