Recipe: Blistered BLT ‘Sandwiches’
Olive oil cooking spray
2 slices romaine lettuce
2 extra large cherry tomatoes, sliced or 1 roma tomato, sliced
1 slice turkey bacon, cooked
2 basil leaves, minced
1 tsp. balsamic vinegar
- Preheat grill to high heat. Spray grill with olive oil.
- Place romaine leaves on grill for 15 seconds per side. Remove from grill.
- Place cherry tomato slices on grill for one minute per side until just blistered.
- To make sandwich, place romaine lettuce leaves on top of one another, then top with cooked turkey bacon slice, then top with cooked tomatoes. Sprinkle minced basil on top, drizzle with balsamic vinegar.
Serves one; serving size is one sandwich. Each serving provides: 72 calories, 2.5 g total fat (0.5 g saturated fat, 0 g trans fat), 10 mg cholesterol, 260 mg sodium, 4 g total carbohydrate, 1 g dietary fiber, 3 g sugars, 4 g protein.
